Cocktail Recipe: Sweet Tea Julep Pops
Looking for a boozy frozen treat for Derby Day? Or any hot summer day? If your ice cream truck had mint juleps, this is what they would taste like. Just make these a day or two ahead of time and you are good to go! This recipe can easily be doubled or tripled.
Sweet Tea Julep Pops (makes one dozen)
2 cups water
2 large family sized tea bags
1 cup packed mint leaves
3/4 cup bourbon
1/2 cup sugar
juice of 1 large lemon
12 (3-4 oz) paper cups (or popsicle molds if you have them)
12 wooden popsicle sticks
lemon slices, for garnish
mint leaves, for garnish
Bring water to boil, and after you remove from the heat, add the tea bags and packed mint. Steep for 10-15 minutes. Strain out liquid.
Stir in one additional cup of cold water, bourbon, sugar, and the lemon juice. Pour 3 ounces of the mixture into the paper cups, along with the mint leaves and the garnish.
If not using popsicle molds, cover the cups with aluminum foil, put a small slit in the center, and insert the popsicle sticks.
